Whole Grain Muffins

  • 1 c old fashioned oats
  • 2 c whole grains of your choice (I used 1 c whole wheat pastry flour, 1/2 c flax, and 1/2 c spelt flour)
  • 1 T baking powder
  • 1 t baking soda
  • dash of salt
  • 1/2 c brown sugar
  • 2 t cinnamon
  • 3/4 c milk
  • 3 eggs
  • 1 t vanilla
  • 1/2 c plain yogurt

Mix dry ingredients.  In a separate bowl mix wet.  Add together, and stir until well mixed.  Divide into muffin tins.  Will make 12 very full tins (ie, big muffins) or 18 smaller ones

Bake at 400 for 15-17 minutes, until a toothpick inserted comes out clean
